Chinese: Wood Ear Mushroom Salad

(serves 4)

Ingredients:
- 4 cups fresh wood ear mushrooms (or about 1 cup dried)
 - 1 cup “Garlic Ginger Sauce” (see master recipe)
 - 1 tablespoon rice vinegar
 - 1 tablespoon agave nectar
 - 2 tablespoons spicy chili crisp
 - Toasted sesame seeds for garnish 
 
Procedure:
- If using dried mushrooms, rehydrate in water (about 2 hours)
 - Boil fresh or rehydrated mushrooms in water (about 5 minutes)
 - Drain and rinse mushrooms under cold water
 - Making the dressing: mix “Garlic Ginger Sauce,” vinegar, agave nectar, and spicy chili crisp in a mixing bowl
 - Add mushrooms and toss well
 - Transfer salad to a serving dish and garnish with toasted sesame seeds
